I am not a mechanic, but here is my two cents worth.

This sounds like a mid-range carburetion problem. Inspect the jet needle for wear. Try rising the jet needle on both carburetors one notch and see what happens. If the carburetors are the constant velocity type, make sure the slide and bore are clean.

I'm guessing the mid-range top end rattle could be caused by preignition due to an excessively lean condition. I think the GS500 is a high compression engine. You are using premium fuel right?
